Prayer to St. Pius X

Glorious Pope of the Eucharist, Saint Pius X, you sought "to restore all things in Christ." Obtain for me a true love of Jesus so that I may live only for Him. Help me to acquire a lively fervor and a sincere will to strive for sanctity of life, and that I may avail myself of the riches of the Holy Eucharist in sacrifice and sacrament. By your love for Mary, mother and queen of all, inflame my heart with tender devotion to her.

Blessed model of the priesthood, obtain for us holy, dedicated priests, and increase vocations to the religious life. Dispel confusion and hatred and anxiety, and incline our hearts to peace and concord. so that all nations will place themselves under the sweet reign of Christ. Amen.

Now that I’ve tried the hamdiculous, it’s time for the Spamdiculous. . .
Pound of bacon, pound of pork & bacon sausage, jalapenos and the star of the show, TWO cans of SPAM with BACON!!!!


Weave the Bacon, and I’d recommend two pounds of bacon, one was stretching it.

Layer on the Jalapenos, seeds and all. I would recommend layering them all parallel so it’s easier to roll.

Spread on the sausage with bacon

I layered the spam on in slabs. I should have cut it into strips to make it easier to roll.

Roll it into a tube. This is where more bacon would make for a tighter weave.

I smoked it with some hickory. You can see that the spam would be better if it was cut into smaller pieces or ground before spreading.

In summary, I didn’t use any BBQ sauce this time. I should have layered the peppers parallel to each other and ground the spam into smaller bits. It tasted really good. I’m chilling it now so I can have slabs for breakfast.

So, you’ve heard of the bacon explosion, but I now show you the Hamdiculous!
1lb each of Bacon, Pork Sausage with Bacon, Ground Ham and some spice.

Weave the Bacon. Beer is used as a performance enhancing drug when making the Hamdiculous.

Sprinkle the Bacon.

Spread the Sausage with Bacon.

Spread the Ground Ham. I just cut disks.

I added a few medium hot peppers, for more awesomeness. If it’s just a man log, use habaneros.

Roll the log.

Smoke the log with hickory till it hits 165 degrees (or more if you are paranoid). I added a bit of Kansas City BBQ sauce the last hour for more awesomeness.

Slice into the deliciousness!

This was truly delicious off the smoker, but even better the next day with breakfast, second breakfast, lunch, second lunch, and dinner.
